What’s your favourite meal out in town that’s not at your restaurant?

The Japanese asparagus fried rice at Sushi Café. Man, that stuff is so tasty and well balanced!

What’s your favourite meal to make at home?

Pizza. I make the dough two days ahead and just use a canned or jarred pizza sauce. Pepperoni is the house fave.

What’s a dish you can’t get in YK that you desperately want?

The cotechino sausage and lentils at Bar Bricco in Edmonton. Easily one of the best bites of food in the entire city of Edmonton. Man, just thinking about it makes my mouth water.

What’s your guilty pleasure/late-night no-one’s watching snack?

Almost anything from a gas station. The cold cut subs that you microwave, taquitos – almost anything! I love it, but it’s so bad for you.

What’s your favourite meal out in town that’s not at your restaurant?

My favourite meal would be… Number 75 at the [Vietnamese] Noodle House. That’s my go-to.

What’s your favourite meal to make at home?

I really like making this ground nut beef stew. It’s actually called African ground nut beef stew. They mix like peanut butter and beef and tomatoes and cashews – it’s so good.

What’s a dish you can’t get in YK that you desperately want?

[Laughs] Taco Bell.

I feel like you say that, and then you go to Edmonton…

– and you regret it after you eat it.

What’s your guilty pleasure/late-night no-one’s watching snack?
Bacon.

What’s your favourite meal out in town that’s not at your restaurant?
My most favourite meal to have in town is the beef tibs at Zehabesha, or pretty much anything on their menu for that matter. Emma [partner and co-owner] and I probably eat there twice a week. We just run down the alley after we close the Fox and eat whatever they have left. 

What’s your favourite meal to make at home? 
We don’t eat at home much because we’re usually at the Fox until past dinner time. Mostly when I’m at home like to eat Alpen Muesli with President’s Choice oatmeal cookies crumbled into it. It’s nice because it doesn’t really have a smell and it’s food and drink combined in one.

What’s a dish you can’t get in YK that you desperately want?
My brother is a chef in the U.K. and there’s a dish that he made for me last time he visited that I like to call the Vegan’s Lament. It’s a rib-eye steak served with braised short ribs in a rich beef gravy. So, beef with beef, in a beef sauce. As an aspiring vegan with environmentalist pretensions, it really hurts my feelings to eat it but I’m weak and selfish.

What’s your guilty pleasure/late-night no-one’s watching snack?
Sometimes I’ll eat a whole French-style dried sausage cut into small pieces and a family-sized bag of high-end salt and vinegar chips with my Saturday night bottle of wine. I never feel guilty about it though. Actually, I don’t think I’ve ever really felt guilt about eating anything. Except once when I had a poached trout that wasn’t very good. I remember telling everyone around the table how average my trout was and then looking down into its little dead face and feeling just wretched that this little creature had died so I could eat it and I didn’t even have the decency to pretend that it was tasty.

What’s your favourite meal out in town that’s not at your restaurant?
That’s a tough one. I don’t normally go out to eat – I’m always working. [Laughs]

What’s your favourite meal to make at home? 
A braised beef of some sort. 

What’s a dish you can’t get in YK that you desperately want? 
Fried sweet bread. I’ve always found it difficult to find.

What’s your guilty pleasure/late-night no-one’s watching snack?
That dirty cheese that comes out of a jar. That Tostitos cheese queso.

What’s your favourite meal out in town that’s not at your restaurant?
To tell you the truth, it would be Red Apple’s liver and onions. You can’t get that anywhere, nobody sells it anymore.

What’s your favourite meal to make at home? 
I like everything quick and simple. I just make myself a nice big bowl of instant noodles, with vegetables and a poached egg inside.

What’s a dish you can’t get in YK that you desperately want? 
Foie gras.

What’s your guilty pleasure/late-night no-one’s watching snack?
I would eat a one-kg block of cheese, any kind – cheddar, feta, provolone. Any kind.
